A bouncy, comforting cheese with a milky and velvety flavour. Made from raw cows milk, this semi soft cheese has a layer of vegetable ash running through the middle. This used to have the job of binding the curds together as it was previously made over the course of two milking sessions. Now it’s added as a nod to the traditional method of production.
